Easy Quinoa Salad – Perfect for Summer!

I am all about easy and delicious food! This quinoa salad is something that I make pretty much every week and just snack on when I need something filling and quick.

I’m not really sure where I originally had or got the idea for this salad but I am glad I did.

It is super easy to make and you can modify it in tons of different ways, which is nice when you haven’t been to the grocery store in a while. Another fantastic thing about this quinoa salad is it keeps very well in the fridge, at least 3-4 days if your veggies are fresh!

The main ingredient in the salad is quinoa. If you’re not familiar with quinoa it is amazing! Quinoa is an ancient grain that is super high in protein, fiber, iron, and B6. As a vegetarian, it can sometimes be hard to get enough iron and B vitamin in my diet, so I love having something like this to fill me up!

If you’ve never cooked quinoa; it’s super easy. Just add one cup of the grain to two cups of water in a medium pot and bring to a boil. Once it’s boiling turn the heat down to low, cover and leave for 15 minutes. After 15 minutes fluff with a fork and you’re done!

Keep in mind when I make this salad I don’t usually measure the ingredients or do any of it very exact, so I’ll just be giving you a general idea of what I like. Feel free to adjust any of the ingredients to your own tastes!

Easy Quinoa Salad
(makes about 6 side servings)

1 cup uncooked Quinoa
1/2 red onion
1 cucumber
1 1/2 cups cherry tomatoes
1/2 cup feta

Dressing

2 tbsp olive oil
2 tbsp balsamic vinegar
Juice of half a lemon
Salt and pepper to taste

Cook the quinoa according to the package or my instructions above. Let cool. Chop all the veggies and feta into bite-sized pieces and add to the cooled quinoa. In a small bowl mix all of the dressing ingredients together (I usually just put the salt and pepper into the dressing, instead of onto the actual salad). Mix everything together and enjoy! I find it tastes best if you let the dressing soak into the salad for at least half an hour in the fridge.

Some nice additions to this quinoa salad that I’ve used are a can of chickpeas (a great addition for more fiber and protein also), canned artichokes, or some snap peas!
